Asparagus timbales

2 bunches fresh asparagus, trimmed and cut in half
1/2 large onion, chopped
1/2 tsp lemon rind, grated
300ml Milk
3 eggs
8 fresh basil leaves, finely sliced
Salt and cracked black pepper

Method

In a saucepan put asparagus, onion, lemon rind and soy milk.
Simmer for seven minutes and then cool for 10 minutes.
Reserve six asparagus tips for garnishing and transfer the rest to a
blender or food processor, add eggs and puree mixture.
Stir in basil. Season to taste.
Place in individual moulds and steam for 15 minutes.
Serve hot or cold garnished with reserved asparagus, green leaves and
a drizzle of extra virgin olive oil.
