Chocolate Self-Saucing Pudding

1 cup flour
1/3 cup cocoa powder
1/2 cup soy life soy milk
1 tsp vanilla

1 1/2 cups boiling water
2 tbls cocoa powder extra
1/2 cup brown sugar
2 tsp honey
2 tsp butter

Method

Combine sugar, flour, cocoa powder and milk in a medium-sized caserole dish and mix until combined.

Spread evenly over the base of the dish.

In a separate bowl, combine boiling water, sugar, honey, butter and cocoa powder and stir until combined.

Pour over the pudding mixture and cover with lid.

Place in a microwave for approximately 10 minutes, or until pudding has risen and is firm on top. Alternatively, place in an oven (180 c) for 20 minutes, or until firm on top.

Note: self saucing puddings can overflow. Check pudding halfway through cooking time and place on a plate if in the microwave or a tray if in the oven just in case.

For a pudding with a difference, why not try adding 1/2 cup of frozen berries, chocolate chips or chopped and soaked dried dates.
