1 small onion, finely chopped
2 tsp cumin
1 tbsp green curry paste
300g carrots, peeled and roughly chopped
500g sweet potatoes, peeled and roughly chopped
500ml water
500ml Milk
Seasoning, to taste
Place all ingredients into a saucepan.
Simmer for about 15 minutes until vegetables are cooked.
Cool, transfer to blender or food processor and blend until smooth.
Adjust consistency by adding more water if too thick.
Season with salt and pepper.
Reheat to serve.
Ideal with savoury muffins.
