175g self raising flour
25g caster sugar
25g brown sugar
100g butter or margarine
2 tbsp Soy Life Soy Milk
2 eggs, beaten
1 tsp vanilla essence
3 tbsp golden syrup
Soy Life Soy Yoghurt for serving
Sieve the flour.
Cream the sugars and butter together until light and fluffy.
In a separate bowl, beat the soy milk, egg and vanilla essence together.
Gradually add the milk mixutre to the creamed mixture, adding a tablespoon of the flour to prevent curdling.
Fold in remaining flour.
Line a bamboo steamer with baking paper.
Spread golden syrup over paper and pour pudding mixture on top.
Place steamer lid on and steam over simmering water for 45 minutes.
When cooked turn out and serve hot with extra golden syrup on top and your favourite flavour of soy yoghurt.
Serves four to six people
