10g dairy-free spread
1 onion, chopped
2 rashers bacon, chopped
300g orange sweet potato, peeled and chopped
300g potato, peeled and chopped
1 tablespoon flour
2 cups stock
1 cup Milk
310g can creamed corn
Fresh parsley, for garnishing
Heat dairy-free spread until melted, add onion and cook, stirring until softened.
Add bacon and potatoes and cook, stirring for 3 minutes.
Add flour and cook for a further minute.
Add stock and simmer, covered for 15 minutes or until the potatoes are tender.
Add milk, creamed corn and season to taste.
Reheat without boiling.
Serve soup garnished with parsley.
